raw, vegan ice cream

Hello :),

How are you?

I am sorry I missed Wellness Wednesday last week; I was finishing up my travels abroad. I hope your summer is still great as well.

Speaking of summer, I want to share with you a receipe that mixes two of my favorite summer loves – raw food and ice cream. yum. yum. yum. This fantastic recipe comes from the one and only Kristina Carrillo-Bucaram over at fullyraw.com (head over there and check out the plethora of tips and recipes).

Recipe for her banana ‘nice’ cream:

*8-9 frozen bananas

*1-2 peaches

*1 cup-o-berries

If you are traveling or do not own a high speed blender, a little splash of fresh coconut milk or water can help with blending. Put the bananas in the blender and blend. Next the peaches. Place in a serving bowl. Add the berries as sprinkles on top –  voila!

Now you have a chemical free, dairy free, gluten free, fully raw dessert with no artificial sweeteners. ENJOY.

pitahaya: an easy summer snack

Are you looking for a quick, refreshing bite?

If so, try out the hydrating pitahaya [dragon fruit]. This delicious fruit is a delightful mix between a kiwi and a grape. Although there are several studies reporting potential health benefits of this refreshing fruit, an extremely exciting one is a 2010 study published in Pharmacognosy Research where scientists found that this fruit can be effective for, “controlling oxidative damage and decreasing aortic stiffness in diabetic rats.” It is hard to go a day without hearing about the diabetes crisis in America. Since cardiovascular issues can occur in both type 1 and 2 diabetes, this wellness knowledge can be a great tool.

To indulge: Slice in half then cut both horizontal and vertical lines through the interior. You can use the skin as a little pink bowl :). To make it extra zesty slice, add fresh lime, and then chill for 10 minutes. As much fun as funky recipes are to prepare, make sure to enjoy the simplicity of summer!
