Labor Day Veggie Burger

Hello friends,

I hope you are enjoying your day wherever you may be. Happy Labor Day to those having a little downtime. Today I want to share with you a very special recipe: My best friend’s famous black bean veggie burger.

Ingredients:

  • Black beans
  • Garlic
  • Onion
  • Bell pepper
  • Egg
  • Hot Sauce
  • Cumin
  • Turmeric
  • Chili powder
  • Bread crumbs
  • Any burger fixins ya like!

Cook 1/2 a bag of black beans (16 ounces of organic canned beans) and let them cool down. Once room temperature mash them in a bowl – so much fun. Add a couple of garlic cloves, 1-2 bell peppers (depending on size), and 1/2 an onion to the black bean mash. Use your intuition while cooking, don’t fret over exact measurements.

Next put your egg, a tablespoon of chili powder, teaspoon of turmeric, teaspoon of cumin, & tablespoon of hot sauce in a separate bowl… Mix away! Alternate between adding this and breadcrumbs with the black bean mash. Slowly add everything in; gently mixing as you go. Once you’re ready you can make 4 large or 6 regular size patties.

Carefully cook patties roughly 8 minutes on each side.

While cooking get your fixings ready. We used onions, butter lettuce, avocado, mustard. Optional: 1 slice of cheese.

date night at the capella ixtapa

Hey you,

How is your week going?

This week’s Wellness Wednesday segment is about the beautiful Capella Hotel in Ixtapa, Mexico. Unfortunately is was already too late in the day for me to get some great pictures, so I selected a few from their website. Head over to capellahotels.com to see more breath taking shots!

We had a couple of drinks on the bar’s terrace plus a scrumptious appetizer. The service was perfect; everyone was warm, knowledgable, and kind. The Beautiful Basil Margarita (grapefruit, basil, aged tequila, agave nectar) and Cucumber Mezcal (cucumber infused mezcal, lime, fresh cucumber) are definitely worth a try. The Margarita is a bit lighter and refreshing, while the Mezcal cocktail possesses a deep smoky aftertaste. For nibbles the fried hibiscus flowers and house made spicy corn chips are a must!

Whatever you do on your next date night, always remember what it is really about. The one you love and the time you get to share.

pitahaya: an easy summer snack

Are you looking for a quick, refreshing bite?

If so, try out the hydrating pitahaya [dragon fruit]. This delicious fruit is a delightful mix between a kiwi and a grape. Although there are several studies reporting potential health benefits of this refreshing fruit, an extremely exciting one is a 2010 study published in Pharmacognosy Research where scientists found that this fruit can be effective for, “controlling oxidative damage and decreasing aortic stiffness in diabetic rats.” It is hard to go a day without hearing about the diabetes crisis in America. Since cardiovascular issues can occur in both type 1 and 2 diabetes, this wellness knowledge can be a great tool.

To indulge: Slice in half then cut both horizontal and vertical lines through the interior. You can use the skin as a little pink bowl :). To make it extra zesty slice, add fresh lime, and then chill for 10 minutes. As much fun as funky recipes are to prepare, make sure to enjoy the simplicity of summer!

mamey smoothie

Hi there :),

Mid-week is upon us and a little healthy inspiration can keep us powered through the week. Currently I am vacationing and writing in Ixtapa Mexico! With the tropical climates I have integrated more raw fruit into my diet. Today I am sharing photos and a recipe for my mamey smoothie. Mamey is a tropical fruit with a thick creamy texture. It tastes a bit like sweet potato and leaves a nice vanilla cherry taste on the pallet. This creamy beverage is super filling and satisfying. Being a tropical fruit it does have a larger carbohydrate and sugar concentration, but one single cup can supply more than 60% of your B6 and Vitamin C daily requirements. Additionally it has close to 30% of your daily potassium needs.

1 ripe mamey
2 cups coconut milk
1 handful of fresh coconut slices
1 tablespoon of raw, organic honey (optional)
1/2 a cup of filtered water
