Mid-week is upon us and a little healthy inspiration can keep us powered through the week. Currently I am vacationing and writing in Ixtapa Mexico! With the tropical climates I have integrated more raw fruit into my diet. Today I am sharing photos and a recipe for my mamey smoothie. Mamey is a tropical fruit with a thick creamy texture. It tastes a bit like sweet potato and leaves a nice vanilla cherry taste on the pallet. This creamy beverage is super filling and satisfying. Being a tropical fruit it does have a larger carbohydrate and sugar concentration, but one single cup can supply more than 60% of your B6 and Vitamin C daily requirements. Additionally it has close to 30% of your daily potassium needs.

Recipe:
1 ripe mamey
2 cups coconut milk
1 handful of fresh coconut slices
1 tablespoon of raw, organic honey (optional)
1/2 a cup of filtered water
5 ice cubes
